The Last of Doll's Orchard Cider is Becoming Apple Cider Syrup

I decided that before the last of the cider from Doll's Orchard in the fall became hard cider that it was time to finish it off by making Apple Cider Syrup for those spring pancakes, waffles, and french toast with lingering thoughts of the fresh cider again in the fall. If you have some cider left or would like to try making cider syrup.. here is the recipe

Ingredients

  • 2 cups Apple Cider

  • 3 Tablespoons Light Corn Syrup

  • 1 cup Loosely Packed Light Brown Sugar

  • 2 sticks Cinnamon

  • 1 Tablespoon Unsalted Butter

Instructions

Heat the cider, syrup, sugar and cinnamon sticks in a saucepan over medium heat. Cook until the mixture is simmering, reduces by half and starts to thicken, about 15 minutes. Remove from the heat, stir in the butter and let it cool completely. Remove the cinnamon sticks, then pour over pancakes or use as desired.
